Feasting; Santorini Style

My brother and his lovely wife, Grace, got married in Santorini in May this year. It was an absolutely gorgeous day, sparkling turquoise seas, sunshine, infinity pools and Grace looked like a young Sophia Loren. It was a little wedding, just the immediate family, and that felt perfect for Connor & Grace. It was relaxed, there was plenty of time to catch up with everyone, and we still all had a bit too much to drink and danced to some cheesy tracks under the stars.

Back home, my Mum was keen to have a wee Northern Irish celebration too, so lots more friends and family could wish Connor & Grace well. I came up with a Greek inspired menu, in honour of the Santorini wedding, and 40 people feasted Greek style at the end of June, despite the slightly drizzly Irish weather!

Courgette, Feta and Mint fritters with Tzatziki

Lamb Kofte with Lemon Wedges

Ciabatta topped with Fava, Caramelised Onions & Thyme

Santorini Pork and Oregano Casserole

Sfougato (Courgette & Feta Frittata)

Spanakorizo (Greek Spinach & Rice), Lemon Roast Potatoes

Greek Salad, Fresh Green Salad
